The rarest & most prestigious of the 6 categories of teas, Yellow Tea (HuangCha) is produced by gently steaming the leaves and covering with a damp cloth, called sweltering . This slightly oxidizes the leaves and gives the tea its characteristic yellow color. HuangCha was reported to be the drink of choice for the Imperial Chinese court.
