White Peony (Bai Mudan) is a popular Chinese white tea plucked from one bud & 1-2 young leaves of the tea plant in the first harvest of the year.  It is allowed to wither & then dried, leading to very little oxidation. White Tea is called such due to the fine, white hairs found on the buds.
