Licorice has been beloved by the ancients since time immemorial. The subtle sweetness can be traced to the glycyrrhizic acid found in the root which has been extracted in a number of forms: medicines, cough syrups, gum, drinks, and candy.
Licorice is a shrubby, woody-rooted plant. Its root is dried and gnawed on by many as is. The aroma and flavor is sweet and comforting, reminiscent of anise or fennel, but considerably stronger.
