Dragonwell (Longjing) green tea is perhaps the most famous Chinese green tea cultivar.  Originating from the Zheijiang province, the tea leaves are plucked, then immediately pan-roasted to stop the oxidation process, thus retaining its fresh, bright-green appearance & taste.
